Bueno. . . Les quieros decir que fue muy interesante ver por primera vez un lugar como el suyo, donde se puede uno manifestar culinariamente. Las recetas estan simplificanda para todos que esten interesando en nuestras comidas. Tengo una sugerencia, por ejemplo, yo estoy en las ultimos enlaces de una investigacion geneologica de mi familia. He podido encontrar familia de Curacao, Las Islas Canarias, La Republica Dominicana, Nigeria entre algunos lugares internacionales. Sin duda alguna he localizado familia campesina entre los cafetales de los montes de Adjuntas y Utuado; entre las Centrales azucareas de Arecibo encontre obreros (Cambalache), carpinteros carretas de buey en Ponce (Mercedita), Duenos de negocios en los muelles y almacenes de San Juan y tambien familia de dulce melaza negra en Loiza y Rio Grande. Valgame! En fin, He encontrado una pletora de personalidaes y oficios. Doctores, pillos, enfermeras, comerciantes, esclavos, musicos, vagos, y mucho mas. Seria un placer anadir mi documento historico un su website. Bueno! basta ya de mi, los felicito por su ezfuerzo en el web. Gracias, Chef Anotio Llanos.

I am very happy to find your site. I am in the process of making a cookbook of my mothers recipes for my sister and brothers. She passed away 2 years ago. The only one I have a problem with is Pastellas. She has a recipe hand written and some photo copies of recipes. Recently I found one with what I beleive is my grandmothers notes but unfortunately I don't speak or read Spanish and this one is in Spanish. I can scan and send it if you could possible translate it for me. Thanks in advance if you can help!

I thought this was a wonderful site. I was an exchange student at UPR Rio Piedras in Spring semester of 2001. During this time I fell deeply in love with the people, the music and most of all the food. In Idaho it is hard to find a lot of the food offered in Puerto Rico. The thing I miss the most is the habichuelas guisadas. Anyone have an idea on how to make them??? Thanks, Peter Davis

Do you have a recipe for pasteles (green bananas, meat, etc). My mom makes them every year and when I try to explain to my American friends they don't understand and when I tried to look it up on the internet and could not find it they did not believe me that it existed. I am making them this weekend with my mom but I just wanted to see if there was a recipe out there. Thanks!

Thanks to all that have contributed and to the establisher of this site. I was born and raised in Brooklyn, however, was fortunate enough to live and work on the Isla long enough to find and marry a Poncena. We now live in Toledo, Ohio. We can't find any resturants or grocery stores that stock P.R. goodies.Does anyone know of any good resturants/Bodega's close to Toledo.

I LOVE this site, it is great. I'm from Puerto Rico and my husband is from Pennsylvania. Although I know how to make some "Comida criolla", I've always wanted to show my husband Puerto Rican food is more than rice, beans and chicken. And in this site I found the help I was looking for. My husband and I are from Brooklyn NY currently residing in the southern area of Indiana. Most folks here think all hispanics are Mexican and don't relaize the HUGE difference in cooking styles! Josephine, we're in the process of putting together some new recipes, including pasteles. As for creating the 'masa', the next best thing to using a 'guallo' (grater) is a food processor.

Michelle, The classic 'pollo asado' uses the Adobo Rub/Marinade that appears under "The Basics" section. First clean the chicken well with lemon juice, rub the Adobo inside the chicken and out. Let this marinade in the refrigerator (covered) several hours, or overnight. Bake uncovered at 325 (f) for approx. 20 minutes per pound. (Or use a meat thermometer for better accuracy). If using a dark roasting pan, the chicken will cook slightly faster. For juicier breast meat, cook the chicken breast down. (Though this will not crisp the breast skin). Buen Provecho!

My husband is Puerto Rican and i've been cooking his favorite dishes for 21 years. I have been looking for the recipe for pollo asado for a long time with no luck. Believe me, no place here in upstate NY can cook pollo asado like back on the island. Does any one have the recipe they could share or a web site that might have it? My husband and I greatly apreciate your help.

I have been looking for puerto rician recipes for a long time now and finding them has not been the problem, it is finding recipes in English that was the problem. Over the years I have learned how to prepare some dishes, but unfortunetly not may. This site will definitly come in handy and my husband doesn't ever have to know!!!!!!
