The Basics

LaGasse's Mojito

This sauce, although very simple, packs a powerful kick of flavor ideal for tostones or fried fish.

Ingredients:

1 bell pepper or sweet pepper
2 cloves of minced garlic
1 onion, chopped
1 cup tomato sauce
5 tablespoons of butter
1/4 cup fresh cilantro, chopped
salt/pepper to taste
Tabasco sauce to taste


Saute onion and pepper until onion is translucent.

Add minced garlic, cilantro, salt and pepper. Cook for one minute over medium heat.

Add tomato sauce, bring to a boil, reduce heat to medium. Allow to simmer for five minutes.

Add Tabasco sauce to taste.

Makes one Cup.
