Ingredients:
3-4
stems & leaves of cilantro
2
cloves of garlic
1
medium to large green bell pepper
1 medium to
large onion
1 medium
tomato
If available, add:
3 recao leaves
3 ajices dulce (small sweet peppers)
Mix ingredients
in a morter and pestle or in a food processor.
When ready to
use, simmer on low heat in 2 tablespoons of vegetable oil- olive,
canola, corn, etc. This
recipe for the Sofrito yields enough for an average recipe - if
you double a recipe, then you would also double the amount of sofrito.
You may also make two,
three, or more times the amount above and freeze the sofrito in
small containers, to be used when you are preparing your next recipe!
