Appetizers

Bacalaitos (Cod Fritters)

Ingredients:

1 1/2 cups of water
2 cups all purpose flour
1/2 Lb of salted codfish (flaked)
2 garlic cloves minced
1/2 tsp baking powder
1 teaspoon salt
1/8 teaspoon black pepper
Vegetable oil for frying


1- Mix the flour and baking powder in a bowl. Then add remaining ingredients. Stir to make sure that the ingredients are well blended.

2- Heat 2 inches of oil to 350 degrees in frying pan. Use a large tablespoon to drop mixture in heated oil, a few at a time. Cook until golden brown.

3- Drain on paper towel and serve warm.

Makes about two dozen.
