Sorullos de Maiz

These corn fritters are traditionally made with cheese, but can be prepared plain with a dusting of powdered sugar instead.

Either way, they are great as appetizers or to replace the standard dinner roll served with a meal !


1 1/4 Cup of fine Corn Meal
2 cups of water
1 Cup of grated cheese
(Cheddar, Monterey Jack, or Fontina)
1 Teaspoon of salt

1- In a saucepan, bring the water and salt to a boil.

2- Remove from heat.

3- Add the corn meal and stir well.

4- Add the grated cheese and mix again.

5- Let this cool for approximately 20-30 minutes.

6- Once cool, use a spoon and place 3 - 4 Tablespoons of the mixture into the palm of your hand, and form a stick 3 - 4 inches long- similar to a short cigar.

7- Repeat until you have used up the mixture.

8- Fry several at a time in hot vegetable oil until golden brown.

9- Remove and place on paper towels to absorb excess oil.

7-Serve hot.
